SHRIMP BRUSCHETTA

This dish was so flavorful! You could serve it as a dip or on salad or even over rice!
Serves 4

Ingredients

  • 20 small shrimp cooked and chopped
  • 5 cherry tomatoes chopped
  • 1 1/2 tbs. ketchup
  • 1 tbs. dark brown sugar
  • 1 clove. garlic minced
  • 1/2 tbs. chopped parsley
  • 3/4 tbs. olive oil
  • 3/4 tbs. rice vinegar
  • Salt and pepper to taste
  • French bread toasted or grilled

Directions

  • Mix all ingredients.
  • Keep chilled.
  • Spoon mixture over bread and serve.
